Six Sensational Spear Salads

To celebrate fabulous fresh Aussie asparagus we have compiled six sensational spear salads for you to enjoy through spring and summer. Spear salads are super simple to make and are perfect for all occasion gatherings of family and friends. Whether for backyard BBQs, picnics or festive dining these salads will delight the senses and satisfy hungry tummies while boosting our veggie intake in the most delicious way!

BBQ Asparagus Nicoise Salad is a fresh fast and fabulous dish for your next BBQ from us to you. The fresh tuna and asparagus only take minutes to cook on the BBQ to create the base for this yummy main meal salad. Of course Nicoise salad traditionally features green beans not asparagus, but it’s lovely to vary a great classic recipe to celebrate the Aussie asparagus season. The cute chat potatoes, baby truss tomatoes, olives and eggs can all be prepared a little ahead of time so all you need to do is add the baby Cos lettuce and freshly cooked asparagus and tuna steaks and let the dining begin.

Springing into summer sweet juicy mangoes add lusciousness to this flavour packed Prawn, Asparagus, Mango and Avocado Salad with Lime, Honey and Coriander Dressing by Liz Posmyk. Liz is best known for her blog, Good Things, a collection of recipes, reminiscences, reviews and food news and we love her beautiful imagery and wonderful recipes and stories. We think this fabulous salad is perfect for festive occasions. Packed with asparagus, avocado, mango and prawns - with crunchy baby Cos lettuce and walnuts and zingy lime, honey and coriander dressing - it is simply bursting with freshness and flavour to tantalise everyone’s taste buds!

Looking for even more zing? What about Asparagus and Black Rice Soba Noodle Salad by Christine Oakley of Passionate Life Kitchen? It’s all dressed up with sesame oil, mirin, rice wine vinegar and soy sauce and packed with asparagus, spring onions, baby spinach, mint and coriander. Bursting with all these groovy greens this is perfect for quick nourishing meals full of freshness and vitality!

We love this recipe for Sichuan Asparagus and Tofu Salad by Mim Hatcher of @mimscuisine on Instagram. Mim has a passion for home grown produce and home baked food and loves fresh asparagus as much as we do! We love this terrific salad and the comments Mim made about growing and using her own garden fresh asparagus, “We still have an ongoing abundance of fat, juicy asparagus spears in the garden and I've been picking handfuls every few days. It's been wonderful! And it's also encouraged me to try using them in different ways (although I do REALLY love them baked!) So for lunch, it's Sichuan asparagus and tofu salad. Yum yum yum is all we can say when it comes to this Asparagus, Tomato and Parmesan Salad by the wonderful Tania Cusak of My Kitchen Stories. Tania loves fresh asparagus as much as we do, saying, “I love the crunch and the clean wonderful feeling of eating Asparagus and I love how quickly it cooks.” Tania has given her beautiful salad an extra burst of flavour and a fabulous texture contrast by adding roasted sage and Panko breadcrumbs. And you can’t go wrong with pairing asparagus with parmesan!

Finishing off on a sweet note we once again applaud Liz Posmyk’s wonderful way with fresh seasonal produce. And just one look at her Asparagus with Strawberries as a Salad and we’re sure you will agree with us. It looks special, tastes exquisite, and fits the bill perfectly for a light lunch. The sweetness and tang of fresh ripe strawberries is enhanced with a touch of fruity olive oil, a splash of raspberry vinegar and a dusting of pepper.
