‘I love the versatility of asparagus. It can be steamed and served as a simple supper with soft-boiled eggs, ham and a light sprinkle of sea salt; or grilled on the barbecue and served with only fresh lemon juice and cracked pepper. My favourite springtime salad is one created by Anton Shaw, head chef of Belluci’s, Dickson. This salad is made using the freshest asparagus, oak leaf lettuce, snow pea sprouts, roasted red capsicum, smoked chicken breast, a punnet of strawberries and a sweet raspberry vinegar dressing’.
